What is Chiran Sencha (知覧煎茶)

Chiran Sencha refers to a Sencha plant grown in the Chiran region of Kagoshima Prefecture, Japan. It is a high-grade tea cultivated using the highest rated cultivars such as Yabukita, Yutakamidori, and Asatsuyu. Chiran Sencha Tea is easy to brew and has a rich and complex flavor, deep green liquor color, and sumptuous aroma.

Chiran Sencha is often harvested during the first flush in Spring, and tea plants are long and dark green just like you expect from a Sencha. Tea leaves are deep steamed to enrich the taste and reduce oxidation. However, some vendors sell mid-steamed Chiran Sencha, and it just varies just a little in characteristics. 

Many drink Sencha to savor its rich taste and enjoy the refreshing aroma. Furthermore, green tea is rich in vitamin C, minerals, antioxidants, catechins, EGCGs compounds, and amino acids, which helps fight disease in your body and makes you healthier. Due to low caffeine, many prefer to drink it as a substitute for coffee.

BREWING

For the 1st infusion per cup serving:

1gram loose tea leaves and 100ml fresh water

Boil the water and cool it down for a few seconds to 80C or 180F degrees. Put the Chiran Sencha leaves in a teapot and pour in hot water. Brew for one-minute maximum just like you brew ordinary Sencha. Pour and serve. Tea has a fresh and sweet aroma, deep green color, and when it cools a bit, you can taste the mild astringent flavor.

For the second infusion per cup preparation:

Use the same leaves from the first infusion and 90C hot water. Let the leaves steep in hot water for five seconds only. Pour and enjoy less caffeine, contained tea. You can also get the third infusion by letting the leaves brew for 30-60 seconds. As you steep the same leaves multiple times, the caffeine level starts to decline. The second brew gives you mild sweetness with no bitter aftertaste, greenish-yellow color, and mellow grassy aroma.
